As I have a sweet tooth, I thought it fun to give you a favourite recipe of mine, fat and calorie reduced!

Lemon Meringue Pie

In a small bowl, put 3T cornflour and 3T of sugar.

Measure 290ml of cold water.

Put a splash of water into the cornflour and mix into a paste. Put the rest of the water into a small saucepan and grate the rind of 2 or 3 lemons into it.

Put the pot on the stove, boil this mixture for 1 minute.

Pour the cornflour paste into the zesty water. Stir until smooth. Boil for another minute, it will go thick and gloopy.

In another bowl, place the juice of 2 or 3 lemons, 20g of melted butter, and 2 egg yolks (put the whites into another clean, dry bowl). Stir. Put this in with the cornflour gloop.

Pour this mixture into an ovenproof bowl.


Whisk egg whites until stiff. Add 3T of sugar. Mix until smooth and glossy.

Place the topping on the lemon mixture. Make it into little peaks so it browns and goes pretty!

Bung in the oven until the meringue goes brown and delicious looking.

Sit for 5 – 10 minutes, and let the lemon mix cool slightly. Makes for easier serving.

Serves 4 people.

So there are these disappeared fats and calories, you say? I have adjusted the amount of sugar from the original recipe, and there is no biscuty-fatty base. Semi guilt free goodness!
